Pretty much any sport bike is a stunt bike if used as such, technically.
I don't consider someone doing a wheelie/stoppie a stunt rider, or the bike he rides a stunt bike. I hold "stunt" bikes to bikes outfitted with modifications clearly intended for stunting (frame sliders don't count). Removed body work, reinforced frames, barred engines, tail sliders, etc. make a bike a stunt bike.

A sport bike has many uses and a stunt bike can only do one thing. And if that one thing is done outside of a parking lot, it's illegal. Kinda like if I were to take my racebike out on the street to go for a ride. It may handle really nice, but you wouldn't want to commute on it! Plus I'd get pulled over as soon as they saw the bald/slick tires, no lights or mirrors and no plate.
