That's a tough one - the easy-out is harder than the bolt...so, I would try, it it's close to the top, cut a slot in the easy out head, and use a screwdriver to turn it out (clockwise). If that doesn't work, sometimes you can punch the center, and start drilling. Although it will be hard to drill, sometimes the turning of the bit loosens the easy out.
