When I refurbished my 6th gen I fitted some wheels that had been stored for a few years. Even with completely rebuilt callipers and master and new pads there was quite a bit of drag present. Eventually I realised my discs had fine surface corrosion from sitting for so long; I said to hell with it and just went riding. After a few good stops, the roughness polished off and they have been super smooth ever since.

Disk brakes by design have nothing to "return" the pads off of the rotors. The system just squeezes and nothing else. If you brake hard and build heat, sometimes they will quit touching as the rotors and pads cool and shrink, but otherwise, the rotors just "float" on the bobbins and will always touch a little on one pad or the other...until you get a tank slapper and sling those pads away. Like Terry said, ride it and use those brakes to get the uneven surface smoothed out and most if not all of the noise will disappear.
