Newb question here...yes I've seen the FSM and how it wants the system to be bled.

Is there any reason I cant just use a pneumatic brake bleeder and pull fluid from each bleeder? Im fairly certain my mighty vac could pull enough from the rear caliper to avoid the under tank bleeder...or am I just crazy? Trying to avoid a cumbersome 2 man job if I can just use the tools I already have at my disposal

I do it the old fashioned way and hand pump through every 6/7 months to keep it fresh.
Using a Mittyvac is great to pull some fluid into the lines when they're empty but you will get air in the system.
I use a short tube and non return valve but also use release and pump method.
It may take a bit of time but it's a proven way for me.
Try as hard as I can the Vac let's air in at places.
    Best of luck.
