The thermostat is easy to check and if failed it will be easy to see that it is stuck open.

When cold gen 6 will crank a little a slow and starting will have a lag if the oil is over filled . Does not take much.
Without pic's $500 sounds fair. It is gen 3 and parts no longer grow on trees so be ready to hunt around a bit for what you need but well worth it...
