Are all the plugs fouled equally? Are the jets stock? Have you checked each needle and seat to insure it is sealing?

The clutch noise is normal and common to all bikes. Do you know if the wiring harness update was done to this bike?
I am 41 and had the same issue and can only say a little time in the saddle will make it better.New bikes tend to make you a little tense at first...
Done, sounds expensive to operate ,would love to know what insurance would be to run an operation like that.
You may want to remove and inspect the speedo driver(easy to do) and inspect the plastic coupler for damage and that it is engageing the sprocket...

On your relay there will be a diagram and the blades of the relay are numbered. The blades will be numbred 85,86,87,87a and30. What do you have...

Do you have a meter that will read frequency?The tach is driven from siganl off the coil , so you should see frequency match engine rpm at that...
There should be a single bullet connector to the right side of the dash, is it plugged in?
