Don't forget the possibility that coolant amount might be too low......Radiator cap could have failed...... Runs cooler without the lower...

Most likely some carb clogs (idle jets, mixture screw passages) restricting fuel delivery. A warm engine may run OK on a leaner mixture, but cold...
Fix the carbs before you do more riding with the choke on !! Otherwise, you could be doing engine damage.
